DIVALICIOUS RECIPES:
We are all losing weight and trying to keep it off. Well, here are some recipes that may be able to help you.
CHILI MEATLOAF:
INGREDIENTS:
Cooking Spray
1 cup of canned tomato sauce, unsalted
3 tbsp of sweetener (sugar subsitute)
2 tsp of prepared yellow mustard
1 1/2 tsp of chili powder
1 tbsp of onion flakes
1 tbsp parsley
1/2 grams of salt
1 pound of lean ground turkey or ground beef
1/4 coup of Italian style bread crumbs
PREPARATION INSTRUCTIONS:
1. Preheat oven to 350 degress. Coat a 9 x 5 inch non-stick loaf pan with cooking spray;
2. In a large bowl, combine 1/3 cup tomato sauce, 2 tablespoons sweetener, mustard, 1 teaspoon chili powder, onion flakes, parsley flakes and salt and mix well. Add in ground meat and bread crumb and mix well again. Pat into prepared loaf pan;
3. In a small bowl, combine and mix the remaining tomato sauce, chili powder and sweetner. Spoon mixture over top of meatloaf;
4. Bake 55 to 60 minutes. Remove meatloaf from oven and let cool for 5 minutes before slicing. Calories: 115.7; Total Carbs 12.7g; Dietary fiber 0.7g; Sugars 8.7g., total fat 1.4g; Saturated Fat 0g; Unsaturated fat 1.4g; Potassium 17.6mg; Protein 20.2g; Sodium 361.9mg (based on one serving); Dietary exchanges equals: 1/2 vegetable, 2 1/4 very lean meat.
LOW CARB CHILI:
1 quart of water
2lb extra lean ground beef (or turkey)
1 tsp cinnamon grounded
1 tsp ground cumin
1 medium onion, chopped
1 tsp Worcestershire sauce
2 medium garlic cloves (mashed)
2 tbsp chili powder
2 tsp salt (optional)
1 tsp black pepper
1/2 tsp hot red pepper flakes
1/2 tsp ground allspice
6 ozs of tomato paste
3 bay leaves
4 oz can of mushroom slices
3/4 medium green bell peppers, chopped
1. Brown meat and drain fat.
2. Add remining ingredients, bring to a boil
3. Simmer for 3 hours stirring occasionally
Calories 143.2; Total Carbs 5.9g, Dietary Fiber 1.6g, Sugars 3g, Total fat 3.8g; Saturated fat 1.4g; Unsaturated Fat 2.5g; Potassium 183.7mg; Proetin 22.3g; Sodium 209.1mg (based on 1 serving). Dietary exchanges: 2 meat and 1 vegetable.
SUGAR FREE SWEET POTATO PIE:
3 tbsp margarine, 80% fat, unsalted, softened
1/4 cup brown sugar substitute, granulated
5 sweetener, granular (packets)
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp salt
1/8 tsp ground all spice
2 raw egg yolks
2 cup sweet potatoes, cooked and mashed
1 cup fat free milk
3 egg whites
1 9" pie crust
PREPARATION INGREDIENTS:
1. Preheat oven to 350 degrees;
2. In a large bowl, beat margarine, brown sugar, cinnamon, giner, salt, alspice, and egg yolk. Whisk in swee potatoes and milk;
3. In a separate bowl, mix egg whites until stiff. Gently fold into sweet potato mixture (do not stir);
4. Pour mixture into unbaked pie shell and bak 40-45 minutes.
Calories 349.2; Total Carbs 39.5g; dietary Fiber 2.9g; Sugars 9.3g, Total Fat 18.1g; Saturated Fat 4.3g; Unsaturated Fat 13.7g; Potassium 287.7mg; Protein 7.1g; Sodium 345.3mg (based on 1 slice). Dietary Exchanges are 3 1/2 fat, 1 other carbohydrate, 1 starch 1/4 very lean meat.
CHEESY BAKED SALSA CHICKEN:
1 pound of boneless, skinless chick breast
1 cooking spray
3/4 cup salsa
1/2 cup fresh chopped green onion
1/4 cup grated parmesan cheese
1. Preheat oven to 350 degrees;
2. Arrange chicken in a cooking spray coated 11 x 17 inch baking dish. Distribute sala overtop of chicken and sprinkle green oinions on top of salsa;
3. Sppon cheese over top and bak in oven, covered with foil for 30 minutes. Take off foil and bake an extra 10 minutes or until chicken is fully cooked.
